Baked Miso Peanut Butter Chicken

2 (22 oz) pkg. drummettes 1-1/2 c. mayonnaise 2 c. panko 3/4 c. shoyu 1/2 c. brown sugar 1-1/2 tbsp. miso 1-1/2 tbsp. creamy peanut butter 2 tbsp. mirin 5 cloves garlic, mashed (I minced) 5 slices ginger, mashed (I used powder) 1 tbsp. sesame oil 1 tbsp. sesame seeds Mix sauce ingredients (shoyu, brown sugar, miso, peanut butter, mirin, garlic, ginger, sesame oil and sesame seeds) well in a bowl; add chicken and marinate for 30 minutes or more. Preheat oven to 435 degrees. Dip each piece of chicken in slightly watered down mayonnaise, then roll each piece in panko. Place chicken on a cookie sheet that has been lined with foil and then sprayed with nonstick spray. Bake at 425 degrees for 15 minutes; turn chicken once and bake for another 10-15 minutes.

Feb 10, 2012 - @charmazingable, Theyre both condiments in japanese cooking. 1.Miso is soybean paste. Commonly used in miso soup. 2.Mirin is rice wine similar to sake. You can google both words to get more indept information. I hope this helps you...

Feb 12, 2012 - It already has! Last night: 'sticky' rice-cooker rice with stir fried chicken breast - very close to what you did the other day. The sauce was the same. We didn't have green onion, so we used white onion cut in slivers and for colour, long strips (about 3 inches) of very thinly cut carrot and a tiny bit of green pepper and a good pinch of red pepper flakes. It was very good. Patrick seems to finally be out of the Sat. night rut of hamburgers. It has been weeks!

Feb 12, 2012 - Part 2 ... and, you know, in part, I think it is that he isn't smoking. Not smoking his pipe has revived his taste buds. I suspect the nicotine killed the ability to taste anything. (YOU have helped revive his interest in food and cooking and I am delighted!) With my food "modifications", I can basically eat anything (in moderation and portion size), although I am staying away from sweet and fried and high fat content. We have to watch the salt, though. Soya has a lot!

Feb 12, 2012 - Yes, shoyu has a lot of sodium in it. I will have to, at some point, get you the lowest sodium count shoyu that we have here. Truly you cannot taste the different but the counts are sooooo far from the 'general' stuff available. I'm glad he has stopped smoking. It is not just a good change for his health, but also for the taste buds. I always wondered about cooks who smoke. How can they possibly taste if their food is well seasoned before sending it out?
